Glutathione (reduced, GSH) is the tripeptide γ-L-glutamyl-L-cysteinylglycine, the most abundant low-molecular-weight thiol in animal cells. Its γ-glutamyl bond resists ordinary peptidases, and its free thiol is oxidized to the disulfide GSSG. Hopkins named it in 1921; its structure was settled in 1929.
GSH is reduced glutathione with a free thiol; GSSG is its oxidized disulfide dimer.
Glutamate is linked through its side-chain carboxyl, which makes the bond resistant to ordinary peptidases.
